Latin 5 Bean Salad

LATIN 5 BEAN SALAD

I can take most of the credit for this recipe, but I was actually trying to recreate a bean salad I had at a party one time and I couldn’t remember what was in it, so I started with what I thought was in it, then added some flavors that I have come to enjoy since living in South Florida. So far all of my Latin friends love this salad and I get frequent and repeated requests to bring this to our get-togethers.

(for larger parties, double the recipe, I promise what doesn’t get eaten will get taken home)

For the beans, I use Goya or Iberia brand because I can consistently find what I am looking for.

  • 1 can Chick Peas (Garbanzo Beans) (Goya Brand if you can find it)
  • 1 can Small Red Beans
  • 1 can Black Beans
  • 1 can White Beans (or Pinto)
  • 1 can Pink Beans
  • 1/2 bag Frozen Corn ((we like baby yellow and white corn mix by Birds Eye))
  • 1 bunch Fresh Cilantro
  • 3 Lemons Juiced
  • 1/2 cup Vegetable Oil (I like the heart-healthy Omega-3 blend)
  • 1 small red onion
  • 3 tbsp White or Apple Cider Vinegar
  • Badia Complete Seasoning
  1. Empty the beans into a fine colander or wire mesh strainer and rinse the beans with cold water. Make sure to rinse all the juice the beans are packed in. Put rinsed beans in a large bowl. Rinse the corn and when the corn is thawed (just a few minutes), drain and place in the bowl. Finely dice the red onion and place in the bowl. Chop the cilantro, removing the stems (the stems are edible, but I prefer to remove them). I prefer a finer chop, but a rough chop will do. Generously sprinkle the Badia Complete Seasoning over the contents of the bowl. Add the oil to the bowl. Juice the lemons and add the lemon juice to the bowl. Stir well. Chill and serve. Mix again before serving. Don’t be afraid to experiment with the beans, lots of different beans will work, however, my experiment with canned Fava Beans didn’t quite go over so well.
